I think the Traulsen R-Series refrigerators were absolutely key to our beautifully aged bloomy rind goat cheeses (34 awards at the American Cheese Society competitions!).

The R-Series fridges have stainless steel exteriors and interiors. Interior racks are upgraded to stainless steel. A very non-corrosive environment for salted cheeses!

These fridges also have constant interior airflow, high humidity, and are programmable. The single section fridges were used for rind development l, set at 52°F with a relative humidity between 80-90%. The two section fridges, held at 40°F, was used for further aging and holding cheeses for market.
